Eric Mathews came to Jason’s Deli for a new challenge after closing his own catering business. Eric has had 25 years of experience in the food service industry, an adventure that has helped Eric advance sales in his Jason’s Deli franchise. The deli is a nationally ranked healthy restaurant, serving a wide variety of products while specializing in catering and delivery. Jason’s Deli’s menu doesn’t contain fructose corn syrup, trans fats or MSG, just healthy, fresh and even organic foods. Jason’s Deli serves items from sandwiches, pastas and potatoes to a 150 item salad bar filled with organic vegetables. They also offer box lunches and sandwich trays with all the fixings as well as off site catering at any facility. Although a hectic industry, Eric still finds time to balance his family with Jason’s Deli, a challenge many caterers understand.

Tell me a little about your family. - I have the pleasure of being married to my lovely wife Teresa and we have two amazing boys Lucas, 10 and Tyler, 7.

What do you see as one of the biggest turning points in your life? - The birth of Lucas was the biggest turning points in my life.

What is your favorite thing to do on a day off? - I love to play outside with my boys.

What is the most unique or interesting thing about you that most people probably don’t know? - I have a unique sense of humor.

What are you the most proud of? - I am most proud of my family and what we share.

What is the best piece of advice you’ve ever received? -  Live your life to the fullest.

What is the one goal you would most like to accomplish? - My goal is to raise my boys to make a difference in the world.

If you could have a super power, what would it be? - My power would be to slow down time; there is not enough time in the day.

What are your plans after retirement? - Spending time with my kids and their family.

What is your greatest talent that you don’t utilize in your daily work life? – I’m musically inclined.

Which talent would you most like to have? - I am not sure of a talent that I would like to have.

What is your favorite book or the last good book you read? - The Three Signs of a Miserable Job by Patrick Lencioni.

What is your favorite movie? - All the Star Wars movies.

What is your favorite TV show? - Law and Order and CSI.

What is your favorite local restaurant? - Jason’s Deli, of course.
