His food philosophy includes using the freshest ingredients available and coming up with unique pairings for an unforgettable dining experience. Chef Thomas unveiled a new dinner menu for the Timber Dining Room in May, featuring flavors for every palate – from short ribs and steaks to seafood and vegetarian offerings.

The Timber Dining Room, the on-site restaurant at Lied Lodge, serves local, sustainable food under soaring timbers and alongside sweeping views of Arbor Day Farm. The menu reflects what’s fresh for the season, bringing the best fruits and vegetables from the field to your table. The Timber Dining Room is open for dinner every evening, from 5:00-9:00.
